If I could talk to my younger self I’d say, “Self, you really should sleep as much as you can. Go ahead and just sleep all day and night on the weekends too. Those nightclub nights are highly overrated. And you should spend as much time alone as possible.” My younger self would likely respond, “Lady you are a nut,” which I’d likely agree with and then ask her if I could join her one night at the club. However, at this point in my life I value sleep and alone time greatly.

Applesauce Date Tea Muffins

  • Ingredients
  • Coconut Oil
  • 2 cups Unsweetened Applesauce
  • 1/2 cup Dates (pitted and chopped)
  • 1 cup Wheat Bran
  • 1/2 cup Buttermilk
  • 1 Egg
  • 2 tablespoons Honey
  • 3/4 teaspoon Ginger
  • 1/2 teaspoon Almond Extract
  • 1/2 cup + 2 tablespoons White Whole Wheat Flour
  • 2 tablespoons Ground Flaxseeds
  • 1 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground Allspice
  • 1/3 cup Old Fashioned Oats

  2. Preheat oven to 375 degrees. Grease a 12 count muffin tin with the Coconut Oil.
  3. Cook the Applesauce and Dates in a medium sauce pan over medium-high heat, stirring frequently. Once mixture has reduced and cooked for about 15 to 18 minutes, remove from heat and spread evenly on a baking tray. Let cook completely (I placed the tray in the freezer while I was preparing the rest of the batch).
  4. Transfer the cooled applesauce and date mixture to a medium sized bowl, and stir in Wheat Bran, Buttermilk, Egg, Honey, Ginger, and Almond Extract.
  5. In a separate bowl whisk together the Flour, Flaxseed, Baking Soda, Salt, Allspice, and 1/4 cup of the Oats. Stir into the applesauce and date mixture.
  6. Spoon batter into prepared tins, filling to the edge. Sprinkle the remaining oats over the tops of the muffins. Bake for 21 to 23 minutes or until inserted tooth pick comes out clean.
