Avocado Rice Cakes

There will be no plain rice cakes or boring snacks on my watch. Crunchy rice cakes are topped with sliced avocado and a few generous spoonfuls of Spicy Tomato Jam. A light sprinkle of salt (optional) and pepper finishes off this simple yet immensely satisfying snack.

  • Ingredients
  • ½ small avocado, halved, pitted, peeled, and thinly sliced
  • 2 rice cakes
  • ¼ cup Spicy Tomato Jam
  • Sea salt (optional) and freshly ground black pepper

  2. Fan the avocado out over each rice cake, top with the Spicy Tomato Jam, and season with sea salt (optional) and black pepper to taste. Serve immediately.
