  • 1 TBSP olive oil
  • 6 scallions (green onions)
  • 2 tsp minced garlic
  • 1 tsp smoked paprika
  • 6 large Roma tomatoes, chopped
  • salt and pepper to taste
  • 1 TBSP olive oil
  • 8 large eggs
  • salt and pepper to taste
  • 8 slices aged cheddar cheese
  • 4 English muffins, split and toasted
  • 2 TBSP butter, unsalted
  1. Instructions
  2. To start, make the sauce. Take the scallions and slice them thin, separating the white and the green parts.
  3. In a large skillet and heat the olive oil. Add the white part of the scallions and the garlic. Stir and then cover and cook over low heat for about 5 minutes, until tender.
  4. Add the smoked paprika and stir for about 1 minute.
  5. Add the tomatoes, season with salt and pepper to taste and then bring to a simmer. Cook over medium-low heat, stirring occasionally until the tomatoes are soft and the mixture looks “saucy”.About 10 minutes. Add the scallion green parts and cook those until tender, about 2 minutes.
  6. Transfer the mixture to a bowl and let cool to room temperature.
  7. To make the sandwiches. In a large non-stick skillet, heat the olive oil then add the butter to melt. In a bowl, beat the eggs with a fork and add them to the skillet. Season with salt and pepper to taste, and cook over medium-low heat until they start to harden, about 4-5 minutes. Cook until the eggs are just set, about another minute longer.
  8. Place 1 slice of cheese on the bottom of each English muffin. Top each piece of cheese with 1 TBSP of the sauce (or more), then half the eggs. Repeat with the remaining cheese, sauce and eggs. Close the sandwich and serve with any remaining sauce.
