Cheesy Spinach Puff

I normally make puffs with minced chicken, mutton or sometimes with vegetables. But this was the first time when I baked with ricotta cheese and spinach. It just came out nice, crisp and perfect.

  • Ingredients
  • For making the puff pastry:
  • All purpose flour – 2 cups
  • Baking Powder – 1 ½ tsp
  • Butter or Vegetable Shortening – 75 gms
  • Salt – ½ tsp
  • Egg – 2 nos
  • Chilled Water – As required
  • For making the filling:
  • Spinach – 1 cup (Blanched, drained and squeezed)
  • Ricotta Cheese – ½ cup
  • Grated Parmesan – ½ cup
  • Garlic – 1 Tbsp (Finely Chopped)
  • White Onion – 1 (Medium – Finely chopped)
  • Parsley – 1 tsp (Finely chopped)
  • Black Pepper – ¾ tsp (Crushed)
  • Butter – 1 Tbsp
  • Salt – To taste
  1. Instructions
  2. Take flour, salt and baking powder in a big bowl. Mix them well.
  3. Cut the butter / vegetable shortening in small pieces. Start mixing in the flour mix slowly with the tips of your fingers.
  4. When the mixture will turn into sand like texture knead into soft dough adding chilled water.
  5. Put the dough into a airtight container and keep it in the refrigerator for 30 minutes.
  6. Meanwhile prepare the filling.
  7. Heat butter in a pan and add chopped garlic. Sauté till they turn light brown.
  8. Next add chopped onion and cook till they turn soft.
  9. Add squeezed blanched spinach (Chop before adding), parsley, salt, pepper. Cook for 2-3 minutes. Take it out in a bowl.
  10. Add crumbled ricotta cheese and parmesan after the mixture cools down completely.
  11. Preheat the oven at 180C.
  12. Take out the dough from refrigerator.
  13. Take a small portion and roll it into a small disk.
  14. Put 2 Tbsp full of filling on half of it. Now cover it with other portion.
  15. Apply a little water on the edge of the dough and seal it carefully. You can also seal it with pressing the edges with a fork.
  16. Put 2/3 cut marks on the pastry.
  17. Beat an egg. Apply some egg wash on each of the pastry.
  18. Grease a baking tray. Sprinkle some flour on it.
  19. Now arrange the puffs on the try. Keep 1” gap between each of them.
  20. Bake for 20-25 minutes or till they turn light brown and crisp.
  21. Serve hot.
