  • Ingredients
  • 1 cup luke warm water
  • 1 package (2 1/4 tsp) active dry yeast
  • 1 tsp sugar
  • 3 cups all-purpose flour
  • olive oil
  • 28 oz can crushed tomatoes
  • 5 cloves garlic
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 lb shredded mozzarella cheese
  • 4 oz cream cheese (optional)
  • 1/2 small white or yellow onion
  • 1 lb spicy italian sausage
  1. Instructions
  2. In the bowl of a stand mixer fitted with a hook attachment, stir together the water, yeast and sugar and let sit for about 5 minutes until frothy.
  3. With the mixer on low speed add 11/2 cups flour and mix until incorporated.
  4. Start adding the rest of the flour a little at a time until the dough starts to come together and pull away from the sides of the bowl. You may not need all of the flour, but you will need most of it.
  5. Let the dough mix with the dough hook until it becomes smooth and has pulled away from the bowl.
  6. Lightly oil a bowl with olive oil and turn the dough into the bowl, coating with the oil.
  7. Let rest, loosely covered, for about 1 hour to rise.
  8. Heat a saute pan over medium-high heat
  9. Combine all ingredients in the sauce pan and cook, stirring frequently until the sauce reduces and thickens slightly (about 10 minutes).
  10. Store in the refrigerator to cool until ready to assemble the pizza.
  11. Preheat the oven to 425ºF.
  12. Brown the sausage, slice the onion, and cut the cream cheese into small chunks.
  13. Roll the dough out to about 1/2 inch thick.
  14. Lightly oil a deep 8 inch cake pan or a spring form pan
  15. Lay the dough in the pan and trim away any excess from around the sides.
  16. Sprinkle about 12 oz of the cheese in the bottom of the pan.
  17. Top the cheese with cream cheese, onions, then sausage.
  18. Pour the sauce over top of the ingredients and spread evenly.
  19. Top the sauce with the remaining 4 oz of cheese.
