  • 8 skin-on chicken thighs
  • 600 g (1lb 5oz) sweet potatoes, peeled and chopped
  • 2 peppers, deseeded and chopped
  • 1 tbsp olive oil
  • 3 sprigs oregano
  • 4 tbsp pesto

  2. Preheat the oven to 200°C (180°C fan) mark 6. In a large baking tray, mix the chicken thighs, sweet potatoes, peppers, oil, oregano and seasoning. Spread into a single layer (with chicken skin-side up) and roast for 1hr. Drizzle over the pesto and serve.
