Coffee Cake

  • Ingredients
  • For the Cake:
  • 1 (16.5 ounce) package yellow cake mix – Duncan Hines Classic Yellow works well. *See notes
  • ¾ cup canola oil
  • ¾ cup 7-Up
  • 1 teaspoon almond extract (if using almonds) or pure vanilla extract (if using pecans or other nuts)
  • 4 large eggs
  • 1 (4 ounce) package vanilla instant pudding mix
  • For the Topping Mixture:
  • ¾ cup dark brown sugar, packed
  • ¾ cup sliced almonds or chopped pecans
  • 2 teaspoons ground cinnamon
  1. Instructions
  2. Preheat oven to 350F.
  3. Spray a 9×13-inch baking pan with baking spray.
  4. For the cake:
  5. Combine cake mix, oil,7-Up, almond or vanilla, eggs and pudding mix in the bowl of electric mixer. Beat on LOW speed for 30 seconds, then beat on MED speed for 2 minutes.
  6. For the Topping Mixture:
  7. Combine brown sugar, nuts and cinnamon in a small bowl and mix well.
  8. To Bake:
  9. Pour half the batter into 9×13-inch baking pan.
  10. Swirl ¼ cup of topping mixture throughout the batter.
  11. Top with remaining batter then swirl another ¼ cup topping mixture throughout.
  12. Sprinkle last ¼ cup topping mixture over top of batter.
  13. Bake at 350F for 35-45 minutes or until a toothpick inserted in the center comes out clean.
