Making food for kids is the most difficult thing.Especially if your kids is choosy like my son, then cooking is definitely a challenge. That is why if my son appreciates something I cook, then I can guarantee that the recipe is keeper. I have won!! He is more fond of restaurant styled food, pizzas, pastas and burgers. When I try to recreate at home with healthy ingredients as I always do, it seldom wins some appreciation by him. But anyway, I keep trying and try to avoid too much of outside food. I do have to force him sometimes though.

Corn Mayonnaise grilled sandwich

  • Ingredients
  • 1 cup corn Frozen kernels
  • 1/2 cup Coriander leaves – chopped
  • 2 Green chillies – chopped fine
  • 1/2 cup Mayonnaise
  • 1 tbsp Honey mustard sauce – (optional)
  • 1/2 tsp Black pepper powder
  • 1/2 to 1 tsp Salt – ( to adjust the taste)
  • 6 White bread – slices
  • Butter bread – to spread on slices
  1. Instructions
  2. Boil the corn kernels till it turns soft.
  3. Mash the with a potato masher or you can grind coarsely in a blender.
  4. Add the coriander leaves and the chillies in the mashed corn.
  5. Mix the mayonnaise and the mustard sauce if adding followed by salt and ground pepper.
  6. Pour the sauce mixture in the corn mixture. Stir to mix well.
  7. Spread the butter on the bread slices.
  8. Place the generous amount of filling on the center of a bread slice.
  9. Place another slice on the top.
  10. Toast using a griller or sandwich maker.
  11. Serve immediately with some ketchup if you prefer.
