Baking is a great stress buster for me. Every weekend I try to bake something for my family … it could be cakes, cookies, any roast or sometimes puffs. I love to work with puff dough prepared from the scratch. I use very basic ingredients to make it very simple. This time I had some corn and mushroom in my refrigerator.

And found some broccoli and parmesan cheese also, so made the puff filling using these ingredients. If you do not find broccoli you can make the filling without it also. Here goes the recipe …

Corn & Mushroom Puff

  • Ingredients
  • For making the puff dough:
  • All Purpose Flour – 300 gms
  • Baking Powder – 1 ½ tsp
  • Vegetable Shortening or Butter – 125 gms (Frozen)
  • Salt – 1 tsp
  • Egg – 1 or Milk – ¼ cup
  • Lemon Juice – 1 tsp
  • Chilled Water – As required for kneading the dough
  • For making the filling:
  • Sweet Corn – ½ cup
  • Button Mushroom – 1 cup (Cut into small pieces)
  • Broccoli – 1 cup (Cut into small florets)
  • Onion – 1 (Big – finely chopped)
  • Garlic – 2 Tbsp (Chopped)
  • All Purpose Flour – 1 ½ tsp
  • Dry Mixed Herb – 1 tsp
  • Oil – 2 tsp
  • Butter – 2 tsp
  • Milk – 1 cup
  • Black Pepper Powder – 1 tsp
  • Cheddar Cheese – ½ cup
  • Green Chilli – 1 (Chopped)
  • Salt – To taste
  • Other Ingredients:
  • Milk – 2-3 Tbsp
  • Poppy Seeds – 2 Tbsp
  1. Instructions
  2. Take a big bowl. Mix in flour, salt and baking powder together.
  3. Cut the butter into small cubes. Add in to the flour mix. Now start mixing the butter into the flower using your finger tips only. The texture of the flour should turn into sandy texture.
  4. Add 1 egg and lemon juice. Those who are not using egg add only milk.
  5. Start kneading the dough lightly.
  6. Now add chilled water little by little and knead a tight dough.
  7. Put the dough in a airtight container or wrap with clean-film and store into refrigerator for 1 hour.
  8. Preparing the filling: Heat oil in a pan and add chopped garlic. When garlic starts to turn light brown add chopped onion. Fry till onion turns pink.
  9. Next add button mushroom and sauté for a while.
  10. Add broccoli pieces and corn. Mix all together.
  11. Add in chopped green chilli, black pepper powder and mixed herb. Adjust salt.
  12. Cover and cook till all turns little soft. Keep this pan aside.
  13. Heat 2 tsp butter in another pan. Add 2 tsp flour and sauté till flour turns light brown.
  14. Start adding milk (room temperature) and stir continuously so that no lumps could be formed.
  15. Now add the sautéed vegetables. Mix all together very well.
  16. Switch off the gas and add grated cheddar or any processed cheese. Keep this aside.
  17. Making the puff: After 1 hour take out the dough from the refrigerator.
  18. Take a small portion from the dough and roll between your palms. Now roll into a small disk.
  19. Cut this dolled dough in half. Take 1 portion and put 2 tsp of filling on one side of it.
  20. Cover with the other side.
  21. Seal the edges with water and then pressing lightly with a fork. Following this process make puff with the other half.
  22. Same way make puffs. You can give any shape you like.
  23. Pre heat the oven at 200 C.
  24. Grease the baking tray with a little oil.
  25. Arrange the puffs in single layer giving 1” space between two puffs.
  26. Brush a little milk on each puff. Sprinkle poppy seed on them.
  27. Put the tray on middle rack of the oven.
  28. Bake for 20-25 minutes or depending on your oven, till the top becomes crisp and brown.
  29. Take out from oven. Rest for 5-10 minutes. Serve hot.
