Creamy Sausage and Kale Gnocchi

Okay, so how is it that spring is already upon us?! I feel like I’ve just dug out all of my puffa coats and woolly hats and yet I saw a man walking around in shorts and sunglasses today…. madness! Before I fully embrace spring and all of the delicious culinary doors it opens for me (raspberries, new potatoes, asparagus, the list goes on…) I wanted to share another plate of indulgent winter appropriate comfort food with you all.

Creamy Sausage and Kale Gnocchi

  • Ingredients
  • 1 tbsp olive oil
  • 8 good quality pork sausages
  • 4 cloves garlic, minced
  • 3 tsp dried thyme
  • juice and zest of 1 lemon
  • 300 ml double cream
  • 40 g grated parmesan
  • 500 g fresh gnocchi
  • 200 g kale
  • salt and pepper
  • small handful of fresh herbs, finely chopped (parsley or basil)
  • 1 tsp chili flakes (if using)
  1. Instructions
  2. In a large frying pan heat up the olive oil on a medium heat. Add the garlic to the pan and fry for two minutes before stirring in the thyme. Squeeze the sausage meat out of the sausage skins and into the pan and fry for 10 minutes until cooked through.
  3. Meanwhile boil the kale for 6 – 8 minutes; adding the gnocchi to the pan two minutes before the end.
  4. Add the lemon zest, juice and parmesan to the frying pan. Pour in the cream and then fill the cream container with water and add that to the pan too. Season very generously with salt and pepper. Bring to the boil and then leave to simmer for 5 minutes to let the cream thicken.
  5. Drain the kale and gnocchi and then pour into the frying pan and stir until both are evenly coated with the sauce. Taste and adjust the seasoning if necessary – more salt, pepper, thyme or lemon may be needed at this stage.
  6. Serve and sprinkle over the herbs and chili flakes.
