  • Ingredients
  • 2 cucumbers
  • 1 cup of spinach
  • 1 cup of cooked quinoa*
  • ½ small onion, chopped
  • ¼ cup scallions, chopped
  • ½ avocado, sliced
  • 1 tablespoon of tahini sauce
  • 1 tablespoon of olive oil
  • Juice of ½ lemon
  • Salt and cayenne pepper to taste
  1. Instructions
  2. Spiralize 2 cucumbers and place in a large bowl
  3. Add spinach, onions and scallions to the bowl
  4. Massage in tahini, olive oil, and lemon juice
  5. Add 1 cup of cooked quinoa to the bowl
  6. Add salt and cayenne pepper to taste
  7. Top with sliced avocado
