  • Ingredients
  • 1 ½ lbs skinless salmon fillets cut into 1-inch pieces
  • Sea salt and freshly ground pepper
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic chopped
  • 4 cups baby spinach leaves
  • 1 cup halved grape or cherry tomatoes
  • 1/4 cup dry white wine
  • 2 tbsp lemon juice
  1. Instructions
  2. Season salmon pieces with salt and pepper.
  3. In a large skillet, heat butter and olive oil over medium heat. Add garlic and cook until lightly golden and fragrant.
  4. Add salmon and cook, stirring occasionally, for 2 minutes.
  5. Add spinach and tomatoes and cook, stirring occasionally, until salmon is cooked through, about 1 minute.
  6. Add wine and lemon juice and cook, stirring, until mixture comes to a boil and thickens, a few seconds more. Correct seasoning by adding salt and pepper.
  7. Serve over rice or noodles.
