Triple-chocolate banana bread

  • Ingredients
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ cup cocoa powder
  • ½ cup butter, softened
  • 2/3 cup brown sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon butter
  • ½ cup bittersweet chocolate chips
  • 3 tablespoons heavy whipping cream,
    at room temperature
  • ½ cup confectioners’ sugar

  2. Preheat oven to 350 degrees F. Spray four 5 ¾ x 3-inch loaf pans with cooking spray and set aside. In a medium bowl, combine flour, baking soda, baking powder, salt and cocoa powder; set aside.
  3. In a large bowl, beat the ½ cup butter and brown sugar together with a hand-held mixer on medium speed for 1 minute. Add eggs, bananas and vanilla, and mix until incorporated. Slowly add the flour mixture until just incorporated. Add semi-sweet chocolate chips and stir into mixture with a wooden spoon.
  4. Divide the batter evenly between the four loaf pans. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of each loaf comes out clean. Cool for 15 minutes before removing from pans.
  5. In a small bowl, combine the 1 tablespoon of butter with the bittersweet chocolate chips. Microwave for 1 minute, followed by 30-second bursts until melted. Add heavy whipping cream and confectioners’ sugar. Stir until combined. Drizzle the glaze over breads.
