Valentine’s Cupcake

  • Ingredients
  • Vanilla Cupcakes
  • 1 1/4 cup cake flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, room temp is best
  • 3/4 cup sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 cup oil
  • 1/2 cup buttermilk {splash of vinegar in a measuring cup, fill with milk and let set for a couple minutes}
  • Buttercream Frosting
  • 1 cup real butter, unsalted, room temp
  • 4-5 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla

  2. Cupcakes
  3. Preheat oven to 350 degrees and fill pan with cupcake liners
  4. Whisk together flour, baking powder, soda and salt. Set aside
  5. In a large bowl, beat the eggs, add sugar and continue beating for about 30 seconds
  6. Add oil and vanilla and beat well
  7. Gradually add dry ingredients alternating with buttermilk
  8. Beat until well combined, batter will be thin
  9. Divide into cupcake liners, 2/3 full – be careful NOT to overfill
  10. Bake for 12-14 minutes or until a toothpick inserted in the center comes out clean
  11. Cool completely and frost
  12. Buttercream Frosting
  13. Beat butter until fluffy
  14. Gradually add powdered sugar,colour alternating with heavy cream and vanilla
  15. Whip until fluffy and desired consistency
  16. Frost cooled cupcakes
  17. serve and enjoy
