Warm Farro Salad with Sherry-Glazed Onions

  • Ingredients
  • 2 cups farro
  • 4 cups water Salt, to taste
  • 4 T. extra-virgin olive oil, divided
  • 1 large yellow onion, finely minced
  • 1 sprig thyme, minced
  • 2 cups sherry, divided
  • Black pepper, to taste
  • Arugula, to taste
  1. Instructions
  2. In heavy-bottomed pot, combine farro and water.
  3. Add a pinch of salt
  4. Bring to a boil; cover, simmer until water is absorbed by farro, about 20 minutes.
  5. Spread farro on tray to cool.
  6. Toss with 2 T olive oil to prevent sticking
  7. In sauté pan, heat remaining olive oil over medium heat
  8. Add onion; stir, cook until translucent
  9. Add thyme.
  10. onion becomes slightly brown.
  11. Add 1 cup sherry.
  12. Cook until sherry is absorbed, continually stirring
  13. Add remaining sherry
  14. Add pinch of salt and pepper, if desired
  15. Cook until onion is slightly caramelized and sherry is reduced
  16. In bowl, mix farro, onion mixture, arugula and additional olive oil, if needed. Serve immediately.
